How do I figure out what I should ask as a settlement for my car accident?

I was in a car accident, the lady behind me, speeding, attempted to p me on a double yellow on a blind turn, poped back behind me then did it again. This time, she clipped my front end, and we spun out of control, she went down the cliff, but was unharmed. I regained control, and stopped before the cliff. She hjas been sighted and was found at fault. Now, I am working with her insurance, who is claiming 100% liability. My problem is, I am a business owner and cannot prove my lost wages. The are telling me since I have no way of proving my lost wages, they are not paying for them. There is property damage to stuff inside my vehicle form the collision, that I may possibly get paid for, but my doctor had to put me on Xanex just to remain calm after this whole fiasco since her insurance in th beginning was telling me they were not going to cover anything. So I was very stressed out, not to mention the bodily injuries I now have, but cannot prove they were caused by the accident. I have looked up a few sights, and do not know what to do. The attorney I hired backed out because I am not going after medical bills since they were very small, but I have about 16000.00 in lost product and wages. Any advice?
